Originally from New Zealand you can believe Jamie Peaker knows a thing or two about a Bar-B-Que and with that, the associated sauces. So it is of no surprise that Jamies’ latest venture is a range of flavoured tomato ketchup.
Living in Galway city now for the past 11 years many people would be familiar with his cooking, from the catering company Chef de Partie in 2005 or the steamed dumplings in St Nicholas markets in 2007. But perhaps best known for the award winning cafe opened in 2008, in the craft village of Spiddal An Builin Blasta. After passing the cafe to Heather Flaherty ex head chef of McCambridges in 2016 Jamie has turned his attention to the Ketchup industry.
“I noticed a real lack of good quality Irish Ketchup, something with proper ingredients and real flavours. This would be the norm back in New Zealand” said Jamie in a recent interview. “It wasn't too difficult to come up with the recipe. It’s about going back to basics, before mass production took out the goodness”. So where to form here for The Sauce Guy? “Well we donate 20c per bottle to Positive Mental Health, so it is about getting out there and selling the sauces”.
